INGREDIENTS


4½ozs (128gms) Butter
3ozs (85gms) Caster Sugar
Egg Yolk 2-3
7ozs (200gms) Plain Flour
½ (1) teaspoon Lemon Zest
Salt ¼ teaspoon


METHOD


Set oven to 180°C  Fan


  1. Cream butter and sugar.
  2. Add eggs one by one and go on beating, then add lemon zest.
  3.  Add the sifted flour and salt and knead quickly into a soft and evenly coloured dough.
  4. Cover and allow to stand in a cool place for 1 hour.
  5. Roll out 1/6 inch thick, cut into shapes with the cookie cutters and bake in a medium oven until lightly browned.
