INGREDIENTS
4½ozs (128gms) Butter
3ozs (85gms) Caster Sugar
Egg Yolk 2-3
7ozs (200gms) Plain Flour
½ (1) teaspoon Lemon Zest
Salt ¼ teaspoon
METHOD
Set oven to 180°C Fan
- Cream butter and sugar.
- Add eggs one by one and go on beating, then add lemon zest.
- Add the sifted flour and salt and knead quickly into a soft and evenly coloured dough.
- Cover and allow to stand in a cool place for 1 hour.
- Roll out 1/6 inch thick, cut into shapes with the cookie cutters and bake in a medium oven until lightly browned.
