100 gm soft brown sugar
200 gm unsalted butter
100 gm runny honey
200 gm S.R. Flour
sp baking powder
½ teasp ground cinnamon
¼ teasp ground cardamom
¼ teasp ground cloves
. finely grated orange zest
40 gm raisins
50 gm chopped
30 gm chopped walnuts
A little demerara for sprinkling
Preheat the oven to 150°C Fan
Line a 900 gm (2lbs) loaf tin with baking parchment
Put the butter, brown sugar and honey in to a saucepan over low heat. When the sugar has dissolved turn up the heat slightly and let the mixture bubble for one minute.
Remove from the heat to cool slightly.
Place the flour, baking powder, zest and spices together in a bowl.
Beat the eggs and whisk carefully into the butter mixture
Add the butter mixture to the flour and spices, mix well then fold in the fruit and walnuts.
Pour into the tin, sprinkle over a little demerara and bake for 40 to 50 minutes or until an inserted skewer comes out clean.
Leave to cool in the tin for a few minutes then turn out on to a wire cooling rack.
Serve in slices and add butter for extra deliciousness!
