Ingredients:

8 ozs plain flour,

2 teaspoons baking powder,

1 level teaspoon of salt,

2 oz butter,

1 large egg,

4oz strong cheddar cheese (grated),

2oz chopped walnuts,

Milk to mix

Set oven to 200° (F).

Method:

Add the salt to the flour along with the baking powder.

Rub the butter into the flour mix until a fine breadcrumb consistency is achieved.

Fold in the grated cheese and chopped walnuts.

Add the beaten egg and enough milk until the dough is soft but not sticky.

Turn on to a floured surface and roll out until about ½ to ¾ of an inch thick.

Cut into two-inch rounds and place on lightly greased baking tray.

Brush the tops with a little milk but don’t let it run down the side of the scones as that will prevent them from rising. Bake for about 10 to 12 mins until well-risen and golden brown.

Serve warm, split and spread with cold butter.
